1 medium onion
5 large eggs
250g small new potatoes
3 table spoons of olive oil

Slice the onion in half and then into half moon shaped pieces of onion. Peel potatoes and cut into thin crisp shaped slices.
Heat oil in the pan until smoking hot then add the potatoes and onions and coat in the hot oil. Once coated add seasoning and put heat on it's lowest - put a lid on the pan and leave contents to simmer for about 20mins.
Whilst waiting break all the eggs into a bowl and beat. When the onions and potatoes are cooked transfer them from the pan into the bowl with the eggs and thoroughly mix.
Once mixed put the mixed egg, onion and potatoe back in the pan on a medium heat and leave to cook for 20 minutes.
