3 sausages
1 red onion, cut into chunks
150g Charlotte potatoes (or any of your choice)
Handful of cherry tomatoes
2 cloves of garlic
Carrots, peeled chopped
Olive oil
100g feta cheese, cut into chunks
Serves: 1 (but can be increased to serve more!)

Preheat the oven to 200c. Drizzle olive oil into a baking tray or roasting dish and put in the oven for a few minutes to heat up.
Once the tray/dish is nice and hot, throw in the sausages and shake it, so they are covered in the oil. Return to the oven for 10 mins.
Meanwhile halve the potatoes and cook in a pan of boiling water for about 10 mins, until they are par-boiled. Drain and add to the tray/dish with the sausages, along with the rest of the veg - give it a good shake and cook for a further 10 mins.
Scatter the feta chunks over and continue baking for 10 mins. Once the sausages and cheese are nice and golden, it's ready to serve!
