Masala Omelette


Packed full of protein and cheaper than...a really cheap thing, omelettes are pretty damn good. This recipe was shown to me by Mrigank, an international student from India. It zings up a normal omelette with tastebud tingling spices and rich Indian flavours. Apparently it's a hit on the campuses of Calcutta.

INGREDIENTS

Ingredients:
2 eggs
1 green chilli finely chopped (or a good pinch of chilli powder, but the green chilli is better)
teaspoon of finely chopped ginger (remember to slice off and discard the hard, outer layer first)
1/2 an onion, finely chopped
1 clove of garlic, finely chopped
1/2 red pepper, finely chopped
big pinch of chopped coriander (this is optional)

STEP 01

Crack the eggs into a big bowl and add all the ingredients.

STEP 02

whisk together

Give everything a good whisk

Grind a bit of salt and pepper in there

STEP 03

Warm up a drop of oil in a frying pan (turning the heat up to high) and once really hot (so it's a little smokey), pour all the liquid into the pan.

STEP 04

let it set

Leave the mixture to slowly bubble away and start to set. It won't take too long, so keep your eye on it.

STEP 05

turn

Once the omelette appears to have set (try shaking the pan a little-if the whole thing moves and has lifted from the bottom of the pan, it's set) get a fork and flip the omelette over. Cook the other side for about a minute, then flip back.

STEP 06

serve

Shuffle it from the pan onto a plate and eat immediately.
