Banana and Strawberry Pancake

Pancakes are pretty much a staple dessert when you're at uni. Here's a cheeky way to get a bit of your 5 a day in there, but remember you could always swap the banana and strawberries for another fruit, or just loads of choc...


100g plain flour
2 eggs
pinch of salt
200ml milk with 75ml water added
3 bananas, chopped into little bits
big handful of strawberries, chopped into little bits
4 scoops of vanilla ice cream (optional)

Sift the flour into a big plastic bowl. You can do this one of two ways- either by using a sieve or if you haven't got a sieve, a colander.



With your hands, make a 'well' in the centre of the flour and break the eggs into it.

With a fork, or ideally a whisk, whisk the eggs together, taking in bits of the flour from the edge of the well, then when that breaks, the flour around it.



Add a drop of the milk mixture and keep whisking everything together until the liquid is absorbed by the flour. Keep adding it in batches and keep whisking until all the milk mixture has been poured into the bowl.

Now get a frying pan onto the hob, and heat up a drop of oil in the pan. The best frying pans for this are the ones that are very flat.


Turn the heat on the frying pan down to halfway, then pour in some of the pancake mix. You want just enough to cover the base of the pan. Once it's in the pan, swirl the pan around to cover the base.



It will take about a couple of minutes to cook, so after a minute, try sliding a knife or fork underneath to prise it from the pan. Give the pan a shake, if the pancake seems to be getting loose, then it's time to flip it.

Clear a big space, start a drum roll and give the pan a preliminary shake to build up the tension. Flip the pan to flip the pancake onto it's other side, or if you're nervous, just use a fork to turn it over.


The other side will need about 30 seconds to cook. It should look nice and slightly golden when it's done and be easy to slide out of the pan.


Before starting on the next pancake, add another drop of oil, to 'grease' the pan up again a bit.


Repeat until all the batter is used up and you have a stack of tasty looking pancakes.



Put one pancake onto a plate and add the chopped bananas and strawberries into the middle.



Fold the pancake over, and put a few spoons of vanilla ice cream on the side. This goes really nice with a drizzle of maple syrup or honey over the top.
